Look to beautiful, quick-growing chervil to unite the sharp, tangy elements of spring and fall salads. Its delicate, ultra-mild licorice flavor adds depth and balance to the salad bowl and is matched by the softness of its foliage, which archs gently close to the ground in sprays of light green wispiness. It is a traditional ingredient of the French herb mix known as fines herbes, and it is a hardy, cold-tolerant crop that can overwinter with little fuss.

Growing Instructions

Direct sow as soon as ground can be worked. Thin to 4" spacing. Harvest when young by cutting the outer stems as you would cilantro or parsley; warming temperatures will initiate bolting. Sow in succession in the spring for a steady supply. If you allow the plant to go to seed, you will have fresh chervil very early the following spring, as the young offspring easily overwinter in zones 5 and up.
