We trialled 25 different greens for baby salad mix in 2013, and these six were our favorite when cut and mixed together. Each variety is cold hardy, however these greens can be sown all season long, so order the bigger sizes for enough seed to succession sow for months. The first succession can be sown as soon as the soil can be worked. We recommend covering the planting with row cover to keep flea beetles away, and to add a few degrees of warmth. Sow equal lengths of each variety in rows, spacing the seeds inch apart and the rows 5-10 apart, then harvest when plants reach between 2 and 3 inched high. Leave about inch when cutting, and your greens will regrow. If cut like this, you can cut-and-come again 3 times with each planting.
