Can be grown all season, though warmer temperatures enhance bitterness. Young leaves add texture and bite to salads; mature leaves can be chopped and braised for a healthy, tasty tonic. A great addition to braised mixed greens, the bitter flavor adds an element that is often lacking in our cuisine.
