The commercial seed trade can be fickle, introducing and dropping varieties with little notice. One variety that gained favor with a local farming couple, a hybrid pepper called "La Paris," fell victim to this. Determined to keep the variety alive, they resolved to produce their own seed. Since it was a hybrid–not a stable, open-pollinated variety–they had to spend time untangling it like a knotted string of pearls. The result? A productive, delicious variety very close to the hybrid La Paris, but in open-pollinated form. The seeds then traveled with the farm's interns until they settled at Phillies Bridge Farm, who passed the seeds onto their local seed library. This perfected pepper has been selected as one of Glynwood's Kitchen Cultivars.

Plants are large (up to 36' in height) and loaded with big peppers. The flavor and texture are first-rate: extremely sweet when ripe, with thick bell pepper-like skin. A handful of plants will provide plenty of pepper flesh for fresh eating and freezing.

Start indoors 8-10 weeks before last frost in very warm spot (80 degrees is ideal). Keep seedlings in a well-ventilated area at 70+ degrees and do not over water. Transplant outdoors into rich soil after threat of frost has passed. Grows to 30" high; may require staking to keep fruits off the ground. Harvest any time after pods begin to fill out; sweetest when deep red.
