Although parsnips may look less interesting than their carrot relatives, their earthy-sweet flavor is actually more complex and absolutely delicious. Add them to soups and stews or make them into a mash, or roast them for a real treat. Parsnips are not afraid of the cold and only get better after frost. Harvest them from late fall to early spring—they'll store well right in the ground!
