New York Improved Eggplant
Certified Organic
Solanum melongena
A gorgeous heirloom eggplant; standard market type.
We love New York heirlooms, especially when they are as good as this. Standard market eggplant: black, taught, shiny skin; dense flesh; loads of fruits. The plants are some-what compact and stand up well to the heavy load of fruits. This variety dates back to the mid-1800s.

Sow indoors 6-8 weeks before last frost, then transplant 24" apart once danger of frost has passed and soil is warm--usually 2-3 weeks after last frost. Cover immediately with row cover, as flea beetles love to devour eggplant leaves. Eggplants want heat; choose your sunniest spot for them. Give them ample water, drip irrigation is best. Harvest when fruit have reached 4-6" in diameter and prepare like any Italian eggplant.
