This treasured heirloom carries a story from one of the world's oldest continuously inhabited cities, Aleppo, Syria. For centuries, it was a staple of the Silk Road and remains at the heart of traditional Middle Eastern cuisine. Its renown comes from its complex, sophisticated flavor: a moderate, building warmth (about 10,000 SHU) balanced by a rich, fruity, raisin-like sweetness and a hint of earthy cumin. This is the classic pepper used to create the deep burgundy-red chili flakes prized by chefs for adding depth to everything from hummus to stews.
In the garden, the plants are robust and heavy-bearing, often growing tall enough—up to four feet—to require staking for support. They produce a generous crop of four- to six-inch elongated fruits that ripen to a beautiful, deep brick red, each with a distinctive blunt, lobed tip. While delicious when roasted or chopped fresh, their true destiny is to be dried, creating the iconic, flavorful flakes that have made this pepper, now listed on the Slow Food Ark of Taste, a global favorite.
