Direct sow as soon as soil can be worked in the spring, and again in the late summer or early fall. Leaves can be harvested individually, as a baby leaf, or by cutting the whole plant. Spinach sown in fall will come up extremely early in the spring. Fall crops yield until deep winter; with a cold frame, you can eat spinach all winter long.
