Not widely known, and certainly not widely seen in markets, lovage is the best-kept secret of the herb world. Its flavor--like celery but sweeter, richer, deeper--is hard to describe but impossible to forget. It is used fresh or dried: just a few leaves, finely chopped, is all it takes to lend a rich, delightful essence to any dish. Of course, like all herbs, lovage has its share of medicinal applications: it is said to stimulate digestion and have mild antiseptic properties. It's also a beautiful perennial plant in a lovely pale green shade with a graceful arching habit. But the real deal is the amazing flavor. Add it to stocks. Pulverize it, mix it with salt, and sprinkle it on soups. Slice it finely and add it to salads. We promise you: you'll love lovage.

Perennial. Start indoors 6 weeks before last frost. Slow to germinate and stays small for quite some time, so be patient. Keep moist, but not wet. Transplant outdoors when plants are 2" high in well drained, fertile soil. Prefers full sun or partial shade. Grows to 18-24" high. Harvest the outer leaves. Prune off flower stalks to prolong the harvest window, or let plants set seed; they can be used in cooking or saved for sowing.
