This is our favorite Thanksgiving squash. We slice it in half, bake it in the oven and stuff it with a nutty brown rice pilaf. The 15-30 pound fruit makes an amazing main dish and centerpiece to the meal. The indelicacy of the shape, warts and all, is balanced by the bright orange flesh and and fine-textured sweet taste that melts in your mouth. Blue Hubbard is also an excellent keeper, lasting until early spring.

Direct sow after frost, or start indoors 2-3 weeks earlier. Transplant in hills spaced 6' apart, 3 plants per hill, or in rows 36" apart. Plants can grow 6' or more, so give plenty of space to take over. Mulch early to help suppress weeds. Harvest when squash are buff-colored with no trace of green. Cure in a dry, warm place for a week or so, then store in a cool, dry, dark place.
