Green leaves and purple stems give way to tender edible flower stalks. Harvest just as buds begin to open by cutting or snapping stem with leaves. Use like raab: saute the stems, leaves and florets and flavor lightly. If allowed to over mature, the stems become tough.

Direct sow outdoors under protection as soon as the soil can be worked. Sow in successions every few weeks for best results. Can be grown as cut-and-come-again as well. Harvest when young to avoid tough stems. Though Hon Tsai Tai does quite well in the summer, fall crops are sweeter and do not have to be harvested as quickly.
