Hopi Red Dye Amaranth
Certified Organic
Amaranthus cruentus
A nutritious green for summer salad mixes.
One of the deepest red greens we've seen. This burgundy-red amaranth is heat- and drought-tolerant (like all amaranths) making it a great choice for sowing in the summer. Add to baby lettuce with other heat-tolerant greens for a great mix. This amaranth will grow very tall and produce long, plumed seed heads. The dark seeds are edible and nutritious as well. The "dye" in the name references this plant's use as a food dye. Traditionally used in Hopi cuisine to color piki bread.

Very easy to grow. Direct sow in the late spring after threat of frost has passed in a sunny, well-drained spot. Sow at 1-2 inches apart for micro and baby greens, and/or thin seedlings to 6-10 inches apart for larger, mature plants. Amaranth tolerates fair fertility and dry conditions, but more fertility and moderate water will yield lush and tall plants. Plant height varies with the amount of fertility in the soil, but this variety can reach 36 inches high.
