New Mexico Amaranth
Amaranthus hypochondriacus
Striking, flame-like flowers in two tones.
A unique, bi-colored grain amaranth with upright, pale green flower heads streaked with raspberry markings. Both the young leaves and the plentiful blonde seeds are delicious. Grow it as part of an edible landscaping plan or simply as an ornamental. Amaranth looks especially stunning when planted alongside sunflowers or zinnias.

Direct sow in the spring after threat of frost has passed in a sunny, well-drained spot. Thin seedlings to 6-10 inches apart. Amaranth tolerates fair fertility and dry conditions, but more fertility and moderate water will yield lush and tall plants. Height varies with the amount of fertility in the soil. Taller plants may require a bit of staking to keep them from flopping over.
