Marshmallow
Althaea officinalis
Certified Organic
Use medicinally, or to make a tasty tea or confection.
Marshmallow roots are very mucilagenous and were originally cooked down to make a sugar-sweetened syrup, lozenge, or confection. Used in traditional herbal medicine to soothe and coat the throat and as a poultice to calm skin irritations. Also a beauty of a plant! Soft and hairy perennial stalks bear delicate, hollyhock-like, pale white-blue flowers with purply- red centers in late summer. All parts of the plant are edible. Attractive to pollinators.

Growing instructions
Cold stratification required: for spring planting, sow indoors in deep seed-starting pots about ¼" deep, in rich, damp soil. Cover and refrigerate for 4 weeks. Afterwards, move to a 70-degree, well-lit spot for germination, which can take up to 14 days. Transplant outdoors after frost in a perennial bed. Alternately, seeds can be direct sown in fall in areas with a mild winter, or very early spring in colder climates, into a clean, prepared bed.
