Sow in well-draining soil in early spring for summer harvest, and in July or August for fall harvest. For larger bases, thin to 1" apart. For the biggest edible portion, hill the plants with soil 2 or 3 times as they grow, higher with each hoeing. This forces the leaves higher up the plant resulting in extra-long blanched stalks. Alternatively, start in flats and transplant when 8–18" tall and pencil-thick, 6" apart, rows 24" apart in holes about 6" deep. Loosen with a fork to harvest.
