This Spanish heirloom eggplant has it all: looks, yield and quality. Large, healthy plants produce beautiful purple and white striped, firm and dry fruits. These eggplants are of such great quality that there is no need to salt them to extract liquid or bitterness. Try them breaded and fried in classic Italian preparations, or see how well they hold up in curries and soups. Whichever way you dice them, they won't disappoint.

Sow under protection 6-8 weeks before last frost and give plenty of warmth. Transplant once nights are above 50 degrees and immediately protect with row cover, or another light-weight insect barrier. If unprotected, eggplants will be decimated by flea beetles. (The row cover also speeds growth by warming the air.) Keep evenly moist. Harvest before fruit starts to get over-sized and change color.
Also susceptible to Colorado potato beetles. Check every few weeks for signs of egg, larva and adult beetles and remove bugs as needed.
