Fans of sauerkraut rejoice: Danish Ballhead is for you. These big fat cabbages don't hold back, growing to a commanding size (8-10 inches in diameter) and yielding lots of cabbage leaves for krauting. Danish Ballhead is also a good storage variety; pull the whole plants in the fall and hang upside-down, root intact, in a cool basement room. Plants will keep at least one month--and under good conditions up to three or four. A late-season type that does best with early-summer sowings.

Start seeds indoors in mid-June. Transplant 3-4 weeks later, 24" apart. Grows slowly the whole summer, and matures into big heads--perfect for the root cellar or making sauerkraut--in the fall. Cabbages prefer fertile and well drained soil. Water at least 1" per week, more in extreme heat.
