French Grey Shallots, also known as Griselles, are thought of as the true shallots, as they can only be propagated from bulbs. Highly prized by chefs, foodies, and home cooks alike, they have a delicious, more refined, umami flavor, as well as very pretty, delicate, pink-purple flesh.

Grey shallots do not store as well as Dutch Red Shallots (only about 3-4 months), but they make up for it with their exquisite flavor. Plan to use them up by the winter solstice—or freeze or pickle for use into the following spring.

A pound of this variety will give you 40-50 plantable cloves of shallots, enough to plant a 25-foot row or 10 feet of a 3-foot-wide garden bed. They will typically yield 6 to 10 times what was originally planted; like all alliums, shallots yield best with very nutritious, well-draining soil and abundant moisture.

Growing instructions
This easy-to-grow allium is planted like garlic in fall (unlike Dutch Red Shallots which can also be planted in spring) for early summer harvest. Shallots grow in clusters that can be gently broken apart like garlic cloves and planted in the ground about 1 inch deep. In the spring, the shallot bulbs will multiply and sprout several green stalks per planted bulb, producing 6-12 bulbs per plant! Prepare a bed with plenty of compost, and set individual shallot bulbs into the soil at a depth of 1-2" of soil coverage. Keep well weeded and water regularly; like all alliums, shallots respond beautifully to irrigation or rainwater. Harvest when the tops fall down, usually in July. Set untrimmed plants onto screens or hang them somewhere sturdy to cure. For curing, a warm, dry location out of direct sun is best. Once the green tops have dried to a crisp, clip them off, then discard any soft or rotten bulbs and store the good ones somewhere dark and dry.

    The first time growing the Dutch Red Shallot was back in 2021 in two 25 gallon containers. They were very productive and according to my notes back then, pest and disease free. I was able to harvest around 60 shallots just from those two containers, and since it would be more ideal to grow them in a raised bed that was a success! I had plenty to share and store for future use. This year, I want to try both the Dutch Red and traditional shallots if I can find someone to split the half pound packs with me. I am growing in a smaller space so honestly, a quarter pound would be plenty for me.

    I knew before buying that this traditional variety was smaller than more modern varieties, but upon receiving the bulbs last fall I became very skeptical of the quality due to how small and shriveled the seed bulbs actually were. I can gladly say that after harvesting 2 days ago (7/16) those doubts have been completely blown away! Planted last week of October 2022, these plants went through our zone 5A winter like little champs and popped up by mid April. After very little care in my raised bed I just harvested dozens of beautiful shallots with a nice mix of large and medium bulbs for the kitchen, and plenty of smaller seed bulbs for replanting this fall. A wonderful little Allium with excellent flavor, highly recommend!

    One pound of mixed size Grey shallots planted 5-6 inches apart almost made a double row down a 15 ft raised bed. We've mulched it with extra leaves for the winter that we will remove in the spring.

    Delicious but small

    All of our shallots came up but they are too small. We have a ton which is wonderful. And the flavor is great. But instead of of 1-2 it takes 5-10 shallots to peel and chop for every recipe!

    Tasty and productive!

    Produced very well even with not so great weather. I had plenty of large and midsize bulbs for use in the kitchen, and more than enough small ones to replant for next year. The leaves also make the best green onions!

    The shallots were nicely packed and arrived when promised. I planted them in October 2022, the recommended planting time here in Oregon. They should be ready by summer 2023. They just started emerging from the ground about 2 weeks ago so it is two early to assess taste or shelf life. I am seeing 100% germination.
