A great beet to grow for fall harvest. Egyptian beets originated in Germany in the 1800s. This variety was improved through selection for earliness, tender skin and sweetness in Massachusetts by Josiah Crosby in the late 1800s.
Expect good sized, round red beets with flattened tops, and upright greens leaves. Shorter days to maturity over other storage beet types make this a good choice for early fall harvests until the season ends.

Direct sow in the spring when the soil is warm. Sow seeds 1-2 inches apart, then thin to 4 inches apart. (The thinnings can be eaten as a baby green.) Allow beets to form, then thin every other beet when they reach 2-3 inches in diameter. Allow the remaining beets to grow to maturity. Beets need fertile soil and at least 1 inch of water per week. Sow in successions for fresh beets all season long. Store in the fall as a root crop.
